I love to make Quesadillas. You can put anything going into them and you have a quick and easy meal. The tortillas now come in so many varieties. Spinach, sun-dried tomato, corn, whole wheat, pesto you just have to find one you like and the magic starts to happen. Kids love them to. Heat them in a skillet and in a few minutes you have a meal.
For this recipe you’ll need 1 onion, sliced. 1 yellow, orange and green peppers., sliced.
Two seasoned chicken breasts. Just sprinkle on some seasoned salt and your choice of the kind of pepper you would like. I covered the chicken with foil and baked in the oven at 350 F for 45 minutes. You could also add a little water into the pan.
Into a fry pan add about 4-5 tablespoons of olive oil. I love olive oil. It sits right next to my stove ready to use. Fry the onions until they are translucent.
Aren’t these colors gorgeous. Who wouldn’t want to eat something like this?
Add the peppers to the pan with your onions and saute them until they are soft but still have a slight crispness to them. About 4-5 minutes.
Into another pan, I like to use my cast iron skillet, place a tortilla, some cheese
Your chicken which has been shredded and hot sauce if you like
See how nicely golden it turned. When the other side is toasted and the cheese has melted, remove from the pan. Continue the process with the other tortillas and fillings.
Place on a cutting board and cut into wedges. I like to use a pizza cutter.
Serve with salsa, sour cream, jalapeno slices along with a nice salad. There you have it, supper in a flash.

Sprinkling Of Herb And Lemon Pepper
Oil For Frying
1Whole Large Onion
3 Whole Large Peppers (colours of your choice)
12 Whole Small Flour Tortillas
3 cups Grated Cheese, Of Your Choice
Salsa, For Serving, Opt.
Sour Cream, For Serving, Opt.
Jalapeno Slices, For Serving, Opt.
Hot Sauce, Opt.
PREPARATION INSTRUCTIONS
Cook your chicken breasts in the oven for approximately 1 hour, or you can most certainly fry them in the pan until fully cooked. Remove from your source of heat and cool. Cut into cubes, slices or just tear apart. Set aside.
In a cast iron skillet add some olive oil and your onions, then your peppers. Cook them for about 5 minutes. Remove from the pan and set aside.
In the same pan over medium heat, add some olive oil and lay a tortilla in the pan. Build the tortilla by adding a good amount of the shredded cheese, chicken and the peppers. Top with more grated cheese and a second tortilla.
When the tortilla is golden on both sides and the cheese has nicely melted, remove from the pan and repeat with the remaining tortillas and fillings. Cut into wedges and serve with salad and salsa, sour cream and jalapeno slices.
