This recipe is a favorite of mine. I mix in different spices all the time depending on what I have in my cupboard or in my garden.Anytime I have to bread something this is the basic recipe and method I use, chicken, beef, pork and fish . I especially like to do caulifower with it. That is my ultimate favourite, “breaded cauliflower”.
INGREDIENTS
3-4 Peeled & Sliced Zucchini
2 Cups Breadcrumbs
2 Cups Flour
3 Beaten Eggs
Salt To Taste
1 Teaspoon Granulate Garlic
1 Teaspoon Paprika
1 Teaspoon Poultry Seasoning
PREPARATION
Peel and slice zucchini.
Into 3 separate bowls add the following: flour, into another the beaten eggs and into the last one the breadcrumbs with the garlic, paprika, salt and poultry seasoning. (You can add just all of your favourite ones. Like basil, rosemary, thyme etc). Take each slice of zucchini and coat with the ingredients in each one of the bowls. Starting with the flour, then the egg and ending with the breadcrumbs. Continue until all of the zucchini slices are totally coated.
Fry in oil until golden
Place on a platter and serve.
CUTLETS
The cutlets below are done with the exact same method. With one exception. You pound the meat with a meat tenderizer.
Bread each cutlet,fry and serve.
