A new recipe for me to try. I love my soups and I really like the split pea soup in the can.
This being different, I thought I would try it. Cruising through my recipes which I collected in Ireland, I came across a soup recipe and with some slight variations I decided to make it.
Soup as I see it, has to be the easiest thing in the world to make. A few basic ingredients, water, salt, pepper and voila, you have the beginnings of a soup. I don’t quite understand why or how people think that this is difficult. Place everything into a pot, let it simmer for a while and there you have it, soup.
RECIPE
INGREDIENTS
2 Cups Split Peas
1 Onion, Chopped
1 Carrot, Peeled And Chopped
2 Celery Stalks, Chopped
10-12 Cups Water
Salt And Pepper To Taste
Cooked Ham, A Piece Finally Chopped In A Processor
PREPARATION
Soak split peas overnight.
Chop all of your veggies. I left the carrot in large pieces.
This is the ham I used.
Take and place a portion of the ham, in a food processor and finely mince.
It will look like this.
Add the rest of the ingredients plus the water. Partially cover with a lid and bring to a boil. Reduce heat, simmer for approximately 1 -1 1/2 hours or until the peas are cooked.
You can shred or slice the whole ham for sandwiches, serve along side with a baked potato, nice crusty bread and salad. Soup is a wonderful thing.
