I know this doesn’t sound appetizing, green soup but it is good AND fast easy to make.
It is full of the dark greens that everyone says are good for us. If you like you could also add more green vegetables and beans and/or lentils.
RECIPE
INGREDIENTS
1 Tbsp. Olive Oil
1 Tbsp. Butter
1-2 Chopped Onion
2 Celery Stocks, Chopped
1 Large Carrot, Chopped
2 Cups Chopped Spinach
2 Cups Chopped Broccoli
1 Cup Peas
1 Potato, Shredded
Salt And Pepper To Taste
3 – 4 Cups Of Chicken Broth, More If Necessary, Or Water
1 Cup Frozen Peas
1 Cup Sour Cream, (Opt.)
2 Tbsp. Fresh Parsley
PREPARATION
Chop all of the vegetables. Heat the oil and butter. Add the onions fry a little and add rest of vegetables, not forgetting the spinach and the shredded potato as I did for the picture. Next add the broth to the vegetables, preferably hot, mixing well. Adding the soup hot will not stop the vegetables from cooking. Add salt and pepper.
Simmer for about an hour, slightly covered and having the soup at a medium heat.
When ready, take the immersion blender and puree all your soup.
Add the peas and simmer until they are cooked.
This soup may be served with a nice heartrice, pasta or anything you like.
