As St. Patricks Day approaches I’m always trying to think of a menu.
The first on my list this year is Irish Soda Bread. It is so easy that I could do it with my eyes shut. Mix everything together, Place the dough on some parchment paper shape and bake,
I am also going to try making this recipe into scones. It is similar to some of the scone recipes I have seen.
RECIPE
INGREDIENTS
4 Cups Flour
4 Tbsp. Sugar
1 Tsp. Baking Soda
1Tbsp. Baking Powder
1/2 Tsp. Salt
1 Cup Buttermilk
1 Egg
1/4 Cup Buttermilk
PREPARATION
Mix flour, baking soda, baking powder and salt together. Set aside. Beat butter and sugar together until light and fluffy. Start adding in flour mixture and the buttermilk, a little at a time.
Knead until all ingredients have been incorporated together, making sure this is not mixed too long. It will make the bread tough.
Place on pan lined with parchment paper. Shape.
Slit the dough on top. Brush the top with milk. You can add a little melted butter to the milk before brushing the bread.
Bake 375F, for approx. 45-50 minutes. I always check by inserting a toothpick into the bread. If it comes out clean then it is ready. Check after 30 minutes to see if it is done. Usually at this point you have a good idea if it needs longer to bake.
