This is a nice recipe for cookies. I found it quick and easy and was able to make a few little changes without any problems.You can make them the size you like. This time I chose to make them much smaller, one bite size.
RECIPE
INGREDIENTS
1 Cup Flour
1/2 Cup Cocoa Powder
1 Tbsp. Ground Coffee
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/2 Cup Sugar
1/2 Cup Brown Sugar
1/3 Cup Olive Oil
2 Large Eggs
1 Teaspoon Vanilla
1 Cup Icing Sugar
PREPARATION
Mix together flour, baking powder and salt. Set aside.
Combine cocoa powder, ground coffee, white and brown sugar and oil with electric mixer. I added everything all at the same time.
Wrap dough in saran and place in the refrigerator for at least 2 hours. Take the melon baller and scoop out little balls. Placing them into a bowl until all the dough has been rolled.
Roll them in icing sugar and place onto parchment lined sheet. Bake at 350F for approx. 6-8 minutes.
Cool on wire racks. Drizzle melted chocolate mixed with butter on top.
