FAST EASY AND YUMMY CREAM OF BROCCOLI SOUP, BEST OF ALL KETO FRIENDLY

If someone was to tell me that all I could eat was soup I would be in seventh heaven.

I LOVE, LOVE, LOVE soup.  I could eat it everyday.  What could be simpler then adding water, veggies, oil, butter and even some kind of meat, cook throughout, There you have it. a meal.  I mean really so simple and nutritious.  I made this recipe up taking into consideration the dietary needs of the people that were going eat it.  It fit the bill for everyone.

RECIPE

2-3 TABLESPOONS OLIVE OIL OR BUTTER

1-2 STALKS OF CELERY

1 WHOLE BUNCH OF BROCCOLI, WHICH INCLUDES 2 STALKS, CHOPPED AND STEMS PEELED AND CHOPPED, ALWAYS PEEL AND KEEP THE STEMS.  IF PEELED THEY ARE TENDER TO EAT IF COOKED.

1 ONION, CHOPPED

1 SMALL BUNCH OF PARSLEY, ABOUT 1/4 CUP

1-2 CARROTS, PEELED AND CHOPPED

1-2 POTATOES, (OPT.)

1 GRATED CLOVE GARLIC

1 VERY LARGE STOCK POT FILLED GENEROUSLY WITH WATER

1 TUB FULL FAT SOUR CREAM

PREPARATION

32AA5726-919F-41B0-8734-D7A15FEE6E72Into a large stock pot add 1-2 tablespoons of butter, brown and then add same amount of olive.

22FB04F8-D3CD-47FC-86D6-51D340265D02Add the vegetables to the pot and fry for a few minutes also adding a clove of grated garlic.

3A2CCC33-1C89-44D8-B376-CFD3D21BB784Add hot water.  I boil some water in my kettle then add it to my vegetables.  By doing this you do not stop the cooking process as you would by adding cold water.  Also add 2 bay leaves and salt and pepper to taste.  Bring to a boil, reduce heat, partially cover and simmer for approximately one hour.

Take an immersion blender and finely chop veggies.  You can leave as is or remove the chunks.  At this same time, add half of the sour cream and use the processor to completely smooth and blend in the sour cream.

Serve with noodles, rice, cheese or anything you like.
