I decided to make a batch of small meatballs to put into the freezer. They can be used for so many recipes and my incentive to do so, was to make a imitation Olive Garden pizza bowl, which I will post at a later date.
RECIPE
INGREDIENTS
3 LBS. GROUND PORK OR GROUND BEEF OR A COMBINATION OF BOTH
1 ONION, CHOPPED
1/4 CUP FRESH CHOPPED PARSLEY
2 EGGS
2 TABLESPOONS GROUND GARLIC
PREPARATION
Into a bowl add your ground pork, fried onions, eggs and parsley. Mix well.
With a small scoop shape your meatballs. I like this way because it tends to ensure that you have the same size meatballs.
Drop them into a small muffin tin. I normally would have shaped them into a rounder shape some but was in a hurry. Place into a 350 degree oven for approx. 15-20 minutes. Check one before you remove them from the oven to make sure they are done.
Remove from pan and let them cool. Freeze in zip lock bags or use directly into a recipe.
