SLOVAK POTATO SALAD

 

I don’t often make food like this recipe since being on the Keto diet.  Though, on special occasions like my son’s birthday I always try to make food that he has grown up on.  Potatoes were always a staple in our home and finding different ways to make and serve them and so many other dishes was easy for me. I absolutely love to cook.

This particular recipe is my friend VJ’s.  She makes it quite often and I thought it would be perfect for this party.  I asked my daughter-in-law and she agreed.  It does not have any type of mayo so if it was going to be a hot scorching day then we would not have to worry that it would spoil.

I have always maintained two things, “do as much as you can ahead of time and it is always better to have more then not enough”.  I have always cooked this way and when I did my own catering it made even more sense to continue this way.  I never had a problem of running out of food there was always plenty and I never ever ran out of time, I was always ready for a function.  Keeping this in mind, making this recipe will be a breeze to make.  You just have to give yourself time and decide on how much you would like to make for the circumstances you have at hand.  The number of people and would you like to have leftovers?

I very seldom measure my ingredients,  I go by sight, feel and taste, it is a bit difficult to give you exact measurements but I will try.  This recipe is forgiving, do not be afraid to try it.  Taste as you go along and add what it needs.  If totally unsure, just add a little at a time until you have the taste you are looking for.  Remembering, you can always add more ingredients but once added you cannot take them out.

When I made this recipe I used 10 Lbs. of potatoes, and just adjusted the other amounts according to the taste I wanted.  Taste, feel and sight.

You will receive many compliments and requests for this recipe.  It is really good.

RECIPE

DRESSING

1/2 Cup Vinegar

1/4 – 1/2 Cup Olive Oil (To Taste)

1/8 – 1/2 Cup Water Or Pickle Juice, Adding More If Needed

1/4 Cup Mustard, Or To Taste

1 Tablespoon Caraway Seeds

1 Grated Clove Garlic

2 Tablespoons Fresh Chopped Dill

Sugar Or Sweetener, To Taste

Salt And Pepper, To Taste

PREPARATION

Take all the ingredients and mix them together in a mason jar and refrigerate.  The amounts of these ingredients can be adjusted when added to the salad.  You just have to taste test and you will know what more to add if needed.

RECIPE

6-10 Potatoes, Depending On The Amount You Need To Make, (For The Party I Made 10 Lbs. But Added More Of The Ingredients For Both The Dressing And The Potato Sections)

6-7 Potatoes, Cooked Peeled And Sliced

1 Large Onion, Chopped

3 – 4 Pickles, Or How Many Pickles You Like, To Taste, Shredded, I Used Bread And Butter This Time

PREPARATION

Wash the potatoes and place them into a large pot with skins, cover with water and bring to a boil, reduce heat and cook partially covered until potatoes are tender.

Remove from water, cool then peel.

Cut potatoes into medium thick slices. Then into half slices.

Place into a bowl and gently toss with dressing, salt and pepper.  Taste test and add what is needed.  If it is too dry add some pickle juice and or water.  The potatoes will absorb the water.  Place into the refrigerator and leave covered for a day or two.  This salad needs to absorb all the flavours. By doing this, it will make the salad so much more tastier.
