I love this recipe. All you have to do is mix everything in the mug and cook it in the microwave. No mess in the kitchen and very little to clean up afterwards.I make it to fill some very large mugs I have. You could make it in a bowl or any other container that can be placed in the microwave. Ready in minutes. So good with a coffee or tea and you eat it out of the same mug you prepare and bake it in. What could be simpler?
RECIPE
2-3 Oz. Chocolate – I Use 75-85% Chocolate, Plus A Little Extra For Grating On Top
2 Tablespoon Butter
6 Tbp. Almond Flour
3 Tbsp. Sweetener
4 Tsp. Baking Powder
1 Tsp. Vanilla
Grated Chocolate For The Top
Whipping Cream (opt.)
Ice Cream (opt.)
PREPARATION
Melt the butter and chocolate together in a mug in the microwave, after 30 sec. stir, return to the microwave, if necessary, being careful not to burn it. Make sure you have a large cup because the cake will double.
Add eggs to the melted chocolate along with the sweetner, mix well.
Add the almond flour and baking powder. Mix until completely combined. Place in microwave for about 60 seconds, until just firm. Don’t overcook, or it will be dry.
Allow it to cool.
Serve with whipped cream, or even ice cream.
