STIR FRY SKIRT STEAK WITH ASPARAGUS AND MUSHROOMS

I love to make quick and easy recipes and this qualifies as being one.  It is also Keto friendly and could be made in many different ways.

RECIPE

1 1/2 – 2 Lbs. Skirt Steak

2 Cups Asparagus

3 Cups Sliced Mushrooms

1 Chopped Onion

3 Cloves Minced Garlic

Sesame Seeds, To Taste Salt And Pepper, To Taste

Soya Sauce, Sprinkled Over  Meat And Veggies

2-3 Tablespoons Rice Wine Vinegar

2 Tablespoons Cornstarch (Opt, not for Keto Diet)

1/2 Cup Liquid

Rice, Or Noodles

 

PREPARATION

MY PRETEND NOODLES

Since being on the Keto diet I searched to find somewhat of a noodle to eat.  These looked interesting so I decided to give them a go.  I boiled them in water, drained them and they were ready when my stir fry was done, placing them on my plate and my stir fry on top.  They are crunchy.  I liked them because I convinced myself I was eating a noodle.

STIR FRY

Into a pot, add 2-3 tablespoons of fat and heat.  I used bacon fat.  Add onions and fry until translucent, next adding grated garlic. Stir well and fry for a minute.  Garlic may also be added to the meat while it is marinating. 

Add the asparagus and mushrooms, fry a few minutes on medium high heat, reduce heat mix and cover with lid.  Cook for a few minutes, add soya sauce, rice wine vinegar and mix.  Next add the steak, mix and fry to desired tenderness.  I like to add the meat after the veggies are already cooking.  This gives you the option to cook it rare to well done.  When steak is almost done, add the cornstarch with some water, beef stock, orange juice whatever you have on hand.  Approx. 3-4 tbsp. cornstarch to 1/2 cup liquid.  Mix until there are no lumps and add the veggies and steak constantly stirring.  Mix until it thickens. If it gets too thick add some water.  I left out the cornstarch, but for those not on Keto it can be added.   Serve on top of rice, or noodles.
