This recipe came from a recipe that a friend gave me many years ago. It was a way she made pork cutlets. When I originally looked at this chicken recipe I could not see the breading sticking to the chicken. So when I remembered how the cutlets were made, I applied it to the chicken and it worked out well.
RECIPE
3-4 Chicken Thighs, Cubed
1 Cup Almond Flour, Or Regular Flour (for those not on keto)
4 Eggs, Beaten
Salt And Pepper To Taste
Oil For Frying
PREPARATION
Cube the chicken and coat with almond flour.
Next move the chicken from the flour into the beaten eggs.
When the chicken is totally coated, pick up the chicken cube, (I like to use a spoon) with some of the egg on it and drop it into hot oil. After the egg coated chicken turns golden…
Turn it over and fry until that side is golden. Remove and set into another bowl. Repeat until all the chicken pieces are cooked.
Serve over rice or my favourite on the Keto diet, cauliflower rice. You can drizzle some of your favourite sauce on top.
