KETO ONION RINGS

Being on the Keto diet definitely requires some adjustments made to your way of eating.  Sometimes I find these changes are not well suited for my taste buds.

When this happens I try to come up with ways to help me along.  At times it is very challenging but perseverance and the thoughts of what makes this important take over.  For the most part I love to eat this way.  I for most of my life have given up the things that I love to eat now.  Like butter and whipped cream.  When I think of why I am looking forward to my next meal, it makes it all worthwhile.

This recipe could quite easily be made for someone not on the Keto diet by substituting the coconut flour with all purpose and the pork rinds with panko crumbs or regular bread crumbs.

INGREDIENTS
1 medium white onion
1/2 cup coconut flour 
2 large eggs
1 tbsp heavy whipping cream
2 oz pork rinds
1/2 cup grated parmesan cheese 

 

PREPARATION

Slice onion width wise in half inch thick rings. Break apart rings and set aside.

Use three different bowls one with coconut flour,

Egg wash and heavy whipping cream,

Pork rinds and parmesan cheese.  Dip each onion ring into each one of these bowls.  First, flour followed by egg and then pork rinds.  Once all onions are coated, go back and coat them starting with the egg wash.  Remake the pork rind and parmesan coating if it becomes soggy or clumpy.

Place double coated rings back on greased baking rack and place in 425 degree oven for 15 minutes.  I also like to spray the onion rings before I place them into the oven.

Serve warm and enjoy!
