There are times it is nice just to have vegetables for a meal or this one is great if you add eggs, meat or seafood to it. This is my go to recipe. I love it and it is so easy and adaptable. Serve it with rice, noodles or just eat it on its own. I love all those ways. Doing the keto plan right now it was perfect just with veggies. Simple and fast.
Chop vegetables of your choice. Add olive oil to a pan, heat and add some chopped onions. Fry until it is translucent then add veggies in order of which one takes the longest to cook and also add some grated garlic. The garlic can be added when the onion is cooked but if not watched carefully it will burn.
Add the rest of your vegetables and cook a few minutes.
Add some soya sauce, tomato paste and ketchup. You could also add oyster, black bean, plum any sauce you like. I usually add two to three. If you find that you have too much liquid add some cornstarch when vegetables are cooked. That way you have some sauce to go along with the rice or noodles.

Mushrooms
Broccoli
Cauliflower
Onions
Garlic
Bean Sprouts
Soya Sauce
Bok Choy
Tomato paste
Tomato Paste (For this recipe which I added tomato was because being on the Keto diet I cannot use cornstarch or flour, but cornstarch or flour would be good to use, dissolved in water.) If you like sauce for your noodles or rice just add more of one of your sauces and if too thin add some cornstarch dissolved in some water or in the sauce you add. Something else I have also done is purchase a prepared one. So many in the market that are great and save a lot of time.
Fry the chopped onions, and when translucent add the rest of the vegetables. Starting with the ones that take the longest to cook. When you have reached the amount of crunchiness you like serve and ENJOY!
