When not having bread of any kind for 6 months this recipe was a real treat and tasted really good. Not hard to do and tastes really good.
RECIPE
3 Cups Shredded Mozzarella
4 Tablespoons Cream Cheese
1 1/2 Cups Almond Flour
2 Teaspoons Xanthan Gum
2 Eggs
2 Teaspoons Dried Yeast
2 Tablespoons Warm Water
2 Tablespoons Melted Butter
1/2 – 1 Tablespoon Salt
PREPARATION
Mix together cream cheese and mozzarella and place into micro wave and cook in 30 second increments, stirring until melted.
Mix together flour, xanthan gum, eggs, melted cheese and yeast that has been dissolved in warm water. Knead for 5 minutes in mixer.
Drop by spoonful onto parchment lined pan. Brush with melted butter.
Bake at 390 degrees until golden. Top with more butter.
