Well I have long looked for a bread recipe on the keto diet that tastes good and is similar to regular bread. I actually thought that was a dream because nothing seemed to work. They all looked good in pictures but fell way short of taste.
When I found this recipe I was so excited. It was so close to the real thing, It was actually a recipe for a bread machine but when I wanted to make pizza I thought I would try and make it by hand. To my surprise it turned out and actually tasted good. If your on the keto diet or a low carb diet you’ll love this.
RECIPE
INGREDIENTS
1 Cup Water
2 Eggs
2/3 Cup Flax
1/2 Finely Ground Oatmeal
2 Tablespoons Butter
1 1/4 Cups Whole Wheat Gluten
1 Teaspoon Salt
1/2 tsp Xanthum Gum
1 Teaspoon Honey
1 Tablespoon Dry Yeast
TOPPINGS
Tomato Sauce
Grated Mozzarella
Salami
Ham
Bacon
Use as much as you like
PREPARATION
Into a large bowl mix together all the dry ingredients. Then into another bowl mix together all the wet ingredients along with the yeast at the end. Mix well and add to the dry ingredients and mix well for about 5 minutes.
Cover with a dish towel and keep in a warm place until it has doubled in size. It will be wet or sticky. About 1 hour.
When it has doubled oil a pan and place dough on top and spread with your hands. I placed some oil on the dough and on my hands to spread it. Now place in an oven that has been preheated at 350 F for about 1/2-1 hour.
Next place either grated cheese or your favourite sauce, or the sauce,then cheese onto the dough, top with pepperoni (I prefer salami, but I didn’t have any), ham and bacon. Place into a, (in my oven) it’s 475 F for approx. 20 minutes or until the bottom is golden and the middle is cooked. I would think in another oven it might be around 425 F.
If it’s still not quite cooked then place back into the oven for another few minutes, always checking to see if it’s done.

but I did use it because for the size of the pizza and the amount of ground oatmeal, I didn’t worry about it. Sorry Alberto. It was good.
