Tacos are fun and easy to make. This recipe is a cinch and ready in 15-20 minutes.
RECIPE
INGREDIENTS
6-8 CHICKEN THIGHS, CHOPPED
1.2 TEASPOON SALT
1/2 TEASPOON CUMIN
1/2 TEASPOON CHILI POWDER
1 CUP LETTUCE , CHOPPED
1 WHOLE TOMATO CHOPPED
CHEESE TO TASTE
PREPARATION
Cube about 6-8 chicken thighs. You can use chicken breasts, it’s just that I prefer the chicken thighs. I buy the boneless and skinless ones, which save me a lot of time when I prepare. Also if they are partially frozen, much easier to cut into cubes. Place the chicken cubes into a bowl and season with 1/2 teaspoon salt, 1/2 teaspoon cumin and 1/2 teaspoon chili powder.
Mix well. Heat a couple of glugs of olive oil into a fry pan and add chicken. Fry for about 10 minutes.
Chop the tomatoes, green onions and some lettuce.
Into some hard taco shells, first place some sour cream.
Next some shredded cheese.
Then some lettuce, chopped tomato and some green onion. You can even top with more chipotle or sour cream.
This is really a tasty and quick dish to make. Consider placing the chicken meat onto some rice if you don’t have tacos on hand.
