Shrimp And Chicken Tacos

img_7205These are ssoo good.  One is shrimp and the other is chicken.

You can make as many as you want.  I love these, well who wouldn’t?  They have batter and are fried.  Now you cannot eat these everyday but they most certainly are a fantstic treat.  You can dip anything you want into this batter, it is light and crispy.  Now I have to confess it is a mix I buy in a box but we all need not to fuss so much when we cook.  So anything to help in making that chore easier, I’m for it.

If you have a British store somewhere near you, you will be able to find it there.  Or by some chance maybe your local grocery store carries it.  Buy some and try it on these you won’t regret it.

RECIPE

INGREDIENTS

3-5 Chopped Roma Tomatoes

1 Lime, Juiced

1 Avocado, Pitted And Sliced

3-4 Chicken Thighs, Cut Into Strips

10-12 Large Shrimp, Raw And Cleaned

Coleslaw

1 Box Of Batter

1 Cup Water

Oil For Frying

1 Package Of Small Tortillas

PREPARATION

img_7189Clean the shrimp.

img_7188Slice your chicken.

img_7192Prepare the batter from the box.

img_7193Heat the oil in the pot.

img_7197Dip each piece of chicken and shrimp into flour first then the batter and immediately drop it into the oil.

img_7198Remove when golden and keep warm. Or already have your tacos ready and put them together right away when the chicken and shrimp are still nice and crispy.

img_7200Heat small tacos in microwave to warm.  Place a little mayo on first,

img_7201Next the coleslaw, chopped tomato, chicken or shrimp, avocado the chipotle sauce and squeeze lime juice on to finish it off.   If  you don’t have chipotle use a plum sauce or even a little jam, hot sauce or your choice on top of the chicken or shrimp.
