Out Of This World Bacon And Zucchini Soup

This zucchini soup is so good that I now you’ll be back for seconds.

It is made in a pressure cooker but an easily be done on top of the stove in 30-40 minutes.  Or in a pressure cooker in about 12-15 minutes.  Please give it a try.  I know you’ll like it.

RECIPE

INGREDIENTS

1 Large Zucchini From A Local Farmers Market OR 6 Smaller Ones From Local Grocery Store, Peeled And Cut Into Cubes.

1 Onion, Chopped

2 Carrots, Peeled And Chopped

4 Ribs Of Celery, Chopped

4 Slices Bacon, Chopped

1/2 Cup Flour

1 Box Chicken Stock

Olive Oil

Handful Parsley

1 Clove Garlic, Minced

Onion Crisps, (OPT.)

Salt And Pepper To Taste

PREPARATION

img_7005Peel and chop all veggies.  Into a stockpot add some olive oil.  Then add all the veggies, bacon and minced garlic,  fry for a few minutes.

img_7006Add 1/2 cup flour and mix all over the veggies.

img_7008Next add the soup, parsley and stir vigorously, making sure there no lump from the flour.  Cover and set timer for 12 to 15 minutes.

img_7009When cycle is complete, use an immersion blender to take out all the lumps and puree all the veggies.

img_7019Can serve with noodles, any kind of pasta, mashed potatoes or bread.  Top with onion crisps.

    This looks like what we will be having for supper tomorrow night – lol. I have bacon in the fridge, and we harvested about 90 zucchinis and DID NOT get out root cellar finished…. so i am in Zucchini using mode! Thanks for linking up at Share the Wealth Sundays!
