This zucchini soup is so good that I now you’ll be back for seconds.
It is made in a pressure cooker but an easily be done on top of the stove in 30-40 minutes. Or in a pressure cooker in about 12-15 minutes. Please give it a try. I know you’ll like it.
RECIPE
INGREDIENTS
1 Large Zucchini From A Local Farmers Market OR 6 Smaller Ones From Local Grocery Store, Peeled And Cut Into Cubes.
1 Onion, Chopped
2 Carrots, Peeled And Chopped
4 Ribs Of Celery, Chopped
4 Slices Bacon, Chopped
1/2 Cup Flour
1 Box Chicken Stock
Olive Oil
Handful Parsley
1 Clove Garlic, Minced
Onion Crisps, (OPT.)
Salt And Pepper To Taste
PREPARATION
Peel and chop all veggies. Into a stockpot add some olive oil. Then add all the veggies, bacon and minced garlic, fry for a few minutes.
Add 1/2 cup flour and mix all over the veggies.
Next add the soup, parsley and stir vigorously, making sure there no lump from the flour. Cover and set timer for 12 to 15 minutes.
When cycle is complete, use an immersion blender to take out all the lumps and puree all the veggies.
Can serve with noodles, any kind of pasta, mashed potatoes or bread. Top with onion crisps.

Have never heard of zucchini soup before. Sounds really good plus the ingredients list looks pretty simple and healthy. (Bacon is healthy right? lol)

This looks like what we will be having for supper tomorrow night – lol. I have bacon in the fridge, and we harvested about 90 zucchinis and DID NOT get out root cellar finished…. so i am in Zucchini using mode! Thanks for linking up at Share the Wealth Sundays!
