Tuna Mac And Cheese

Pasta is fantastic in any way.  This is something that I could eat everyday but don’t.  So when I do make it I really enjoy it.

This little recipe even my husband the Mayor enjoys and he is not a pasta lover, probabIy the only one in the whole world.  How can anyone not like pasta?   I don’t remember where the original recipe came from but I know I have tweaked it as I do with every recipe I have.  This is only one version of what can be done with it.  Probably the easiest, since I am all about quick and easy lately.  The one thing I do like about this recipe is that you can freeze it and just pop it into the oven when you need it.  Nice to know that something is ready when unexpected company comes.  Give it a try and let me know what you think.

RECIPE

INGREDIENTS

1/2 Cup Butter

1/2 Cup Flour

1 Cup Water

4 Cups Chicken Broth

1 Can Tuna

2 Cups Pasta, Your Choice

1 Cup Mayonnaise

1/2 Cup Sour Cream

4 Cups Of Shredded  Cheese, Your Choice

1/2 Teaspoon Salt

1 Finely Chopped Onion

Oil Or Butter

img_6659Cook 2 – 3 cups of pasta according to package directions.

img_6662-1Add the onions to a sauce pan and fry, next adding 1/2 cup flour.  Mixing until lumps appear then adding 1 cup of boiling water, whisking again until lumps disappear…

img_6665-1Next add heated chicken stock and whisk until all is well blended and thickened.  If it is too runny mix a couple of tablespoons of flour with some water and add to the soup ALWAYS  whisking until it reaches the thickness you want.  Or if too thick add some more liquid.  This process is just like making gravy.

img_6661-1When pasta is cooked, drain and add 1 or even 2 cans of tuna along with 1/2 cup sour cream and 1 cup mayo, mix well.  Then add the 4 cups shredded cheese.  Combine all the ingredients.

img_6668-1Followed by cheese sauce, mix well and pour into a baking dish.  Top with cheese, cover and bake at 350 degrees, 40 minutes.

PREPARATION

Prepare pasta according to package directions.  In a sauce pan fry the onion in butter until soft.  Add the flour but have 1 cup or so of hot boiling water at hand.  Once the flour is added to the butter and you very quickly whisk and know it will form lumps.  Not to worry.  Pour in your boiled water and quickly stir until the lumps disappear.  Next add warmed chicken broth and whisk until well combined.  Next add the salt, mayo, sour cream, shredded cheese, reserving  some for the top making sure all the ingredients are well mixed together.  When the pasta is ready mix together with the canned tuna with or without the water and cheese sauce, pour into a casserole dish, top with more shredded cheese and either freeze when cooled or bake at 350 degrees for 40-45 minutes.  To cook after being frozen, thaw completely and bake the same way.
