Quick And Easy Sweet And Sour Chicken

 

img_6706Yet another easy meal and made very quickly.  This is my go to when I am in a hurry.  I often switch it up with seafood, beef or pork and add different sauces like oyster, black bean, ketchup or sriracha  I have even been known to add all of them into one recipe.  My suggestion is don’t be afraid to switch things up in a recipe.  Add the things you have and add as little or as much as you like.  Experiment, where do you think all these different recipes come from?  Just have fun and experiment.img_6700Cut 1 chicken breast per person and season with salt and pepper and some granulated garlic.  Set aside.

Chop your favourite veggies into bite size pieces.  The amount is up to you.  Or as I did this time, I used frozen veggies.

I start cooking my rice about here.  So while my rice is cooking I start on the rest of the meal.  When my meat mixture is ready, so is my rice. I use a cooker for the micro wave and it cooks my  basmati rice in about 12 minutes.  But you cook your favourite rice according to package directions.

img_6700Heat a pan with olive oil and then toss the chicken in to cook.  If you like during this process add a bit of water,1/4 to 1/2 cup, to prevent it from burning or drying out.  Also add some soy sauce, a few glugs would work.

img_6704Next add your veggies and cook until al dente.  Now by that I mean,  cook them to the consistency of tenderness  that you like.

img_6702Next add a bottle of sweet and sour sauce.  If you like a lot of sauce as I do, add some water.  I added about 1 cup.  Next I mixed 1 cup of water with about 1/4 -1/2 cup of flour and well mixed.  I started to add this to the meat mixture and added approximately 1/2 of it stirring constantly until it had thickened to the consistency I like.  If too thick add more water if not thick enough add more of the flour mixture.  This is essentially like making gravy.

img_6707Once the sauce has thickened, your good to go.  Serve on or along side of the rice.  You can add as much or as little sauce as you like with the rice.

This dish is also excellent with seafood, beef or pork.

The amounts of the ingredients are really up to you. I very seldom measure, I just eyeball it.  Don’t be afraid to do this.

RECIPE

INGREDIENTS

1 Chicken Breast Per Person, Chopped Into Bite Size Pieces

3-4 Cups Chopped Veggies, Your Choice

4-6 Cups Cooked Rice

1 Bottle  VH Sweet And Sour Sauce

1/4-1/2 Cup Flour

1 Cup Water

3-4 Tablespoons Soy Sauce

Olive Oil

1 Cup Bean Sprouts, (Opt.)

PREPARATION

Chop chicken into bite size pieces.  Doing the same with the vegetables.  Into a heated pan with a couple of glugs of olive oil, place in your chicken and stir fry until it is no longer pink.  Place your vegetables in next and constantly stirring with the chicken add some soy sauce.  Next I like to add in some water then my bottle of sweet and sour sauce, stirring to make sure all is blended.  Add the flour mixed with water and stir until all has thickened.  Season with salt.  At this point you can lower the heat and cover until the rice is cooked, making sure all is continually stirred.  Just before placing all of this into a bowl, I like to add some fresh bean sprouts well mixed into all of the meat mixture for a little added crunch.

When rice is cooked place the chicken mixture on the rice or serve separately in two bowls and everyone can help themselves.

      Hi Mary
      Recipe is good. It’s one that I made out of my head and I always tweek it. I always use to make it with my own sauce and still do. But when I don’t feel like fussing or can’t for one reason or another I use the bottled sauce. I have a sweet and sour recipe and a pineapple one. You can use either with outstanding results.

Let me know how you make out with them. On the second recipe you can make your own sauce. I usually make the sweet and sour but pineapple would also be delicious.
