This is a really nice tasty dish. Easy to make and can be made then frozen for a quick meal.
It really can be made with any pork meat.
RECIPE
INGREDIENTS
1 Tenderloin, Approx. 2 Lbs.
1-2 Cloves Garlic, Chopped OR Sprinkle With Garlic Granules To Taste
1 Onion, Chopped
Mini Peppers, Chopped
1/4 Cup Parsley, Chopped
2 Cups Mushrooms, Chopped
1 Can Mushroom Soup
1/2-1 Cup Sour Cream
2 Cups Rice, Uncooked
Salt And Pepper To Taste
Pepperincino To Taste, Opt.
PREPARATION
Place some olive oil into a pan, heat and brown tenderloin, sprinkle with granulated garlic, salt and pepper.
Place into a casserole dish add some water, approx 1/2-1 cup and cover with foil. Place into a 350 degree oven for about 40-60 min.
Clean and chop peppers, mushrooms, onions and parsley. Place into a heated pan with olive oil the onion, peppers, mushrooms and parsley. Fry a few minutes.
Add approx. 1/2 cup flour, mixing quickly. Lumps will form but not too worry. Next add approx. 2 cups boiling water, whisking very quickly. Lumps will disappear and it will thicken.
Next add the canned mushroom soup and 1/2 cup to 1 cup sour cream.
Mix until well blended.
Add to the tenderloin in oven, mix and place back to finish cooking the meat.
Prepare rice according to package directions. When rice is fully, cooked serve individually or on a platter with the sliced tenderloin and mushroom and pepper gravy.
