If you like beans you’ll like this recipe..It is quick and easy and requires very little fuss. My friend GG gave me this recipe years and years ago, I just tweaked it. Which I usually do every time I make it. Don’t limit yourself to using the same ingredients all of the time. Switch it up.RECIPE
INGREDIENTS
1 Bag Tortilla Chips (Larger One)
1 Avocado, Chopped
1 Tomato, Chopped
1 Green Pepper, Chopped
1/2 Cup Corn
Shredded Cheddar Cheese, To Taste
Pickled Or Fresh Jalapenos, To Taste, (OPT.)
1/2 Cup Black Beans, (OPT.)
1/2 Cup Re-fried Beans, (OPT.)
Salsa Sauce Can Be Used In Place Of Beans, To Taste
PREPARATION
Place taco chips onto a parchment lined pan.
Layer your ingredients, with a layer of shredded cheese in each layer so veggies will stick together and not fall off. If you don’t like the beans add some salsa sauce on top of the cheese. Really good like that too.
Bake at 375 degrees until cheese has melted. About 7-10 minutes. Keep and eye on these so the tortilla chips don’t burn.
Serve with hot sauce and extra jalapenos. Of course this is totally optional.
