I have never been a big fan of waffles until I ordered a waffle maker. I did it for my grandchildren because they do like waffles. I thought it would be fun for them to have waffles for breakfast every now and then. Well, I can tell you from the first time I ate one, I realized I could eat these everyday. They are so light and when eaten right away, nice and crispy. With a little maple syrup and some fruit, even a poached egg, which I love, they are a perfect breakfast. I hope you try this recipe. Honestly, you’ll love it. Oh and I forgot to mention, this recipe will keep in the refrigerator for 1 week. Please remember to cover it.
Onto one bowl add 2 cups of flour, 4 teaspoons of baking powder, 1 tablespoon sugar. Mix to combine. Into another bowl add 2 beaten eggs, 1 3/4 cups of milk and 1/2 teaspoon vanilla,(opt.)
Mix well. Not to worry if you still have a few little lumps of flour. One of the tricks for light and fluffy waffles is not to over beat the batter.
Spray your waffle maker with a little oil and heat.
When the waffle iron is ready, pour your batter in. My machine is an upright and takes about 1 cup of batter.
When the waffle maker indicates that it is ready, remove the waffle.
Place onto a plate and serve with your favourite toppings.
Some yogurt, blueberries and a sprinkling of icing sugar. But don’t limit yourself to just the traditional toppings. Try serving these with eggs, tuna salad or when thinking way out of the box try them with a hamburger topped with an egg of your choice, bacon, lettuce, tomato and avocado. Yummy goodness!
RECIPE
INGREDIENTS
2 Cups Flour
4 Teaspoons Baking Powder
1 Tablespoon Sugar
1/4 Teaspoon Vanilla (Opt.)
2 Eggs, Beaten
1 3/4 Cups Milk
1/2 Cup Oil
PREPARATION
Mix all of the dry ingredients into a bowl. Next, mix all of the wet ingredients together in another bowl and add them to the flour. Mix well, not worrying about some of the little lumps. If you over beat the batter the waffles won’t be light and fluffy.
When the waffle maker indicates it is hot enough, pour in the batter and cook until the little bleep goes off.
Serve with your favourite fillings and be adventurous. Try something new.
