One of my most favourite things to bake are scones. They are fast, easy and delicious with coffee or tea. These are nothing fancy but they are good.
The trick to making them is not to over work the dough, they come out lighter. I’ve tried this recipe a number of ways. With fruit, without fruit, less sugar, more sugar, different flours and they’ve all worked for me. Some will be a bit moister, some a bit drier, some will be sweeter and some a bit heavier, some lighter but once a little clotted cream and preserves are placed on top, mmmmm yummy! Nothing better.
Give yourself a quiet time to enjoy them. You won’t regret it.
RECIPE
INGREDIENTS
440 Gr. Flour
2 Tablespoons Baking Powder
80 Gr.Butter, Ar Room Temperature
3 -4 Tablespoons Sugar
4-5 Tablespoons Yogurt, Any Kind
2 Eggs, Beaten
4-5 Tablespoons Milk, Add As Needed
Sugar For Sprinkling
PREPARATION
Sift flour and baking powder into a bowl and add the butter. Break it into little pea size pieces.
Next, add the eggs, milk and yogurt. Sometimes I beat them together in a bowl then add them to the flour.
Gently work everything together.
Place the dough onto a lightly floured pan lined with parchment. Flatten the ball out with your hand and cut into wedges.
Spread the wedges apart and brush tops with a little beaten egg and sprinkle with sugar.
Bake at 350 degrees, until golden. About 8-12 minutes.
