Oh gosh these are good. I have been making these for many, many years.
They are easy to make and in our house, don’t last. I usually eat a dozen myself while cooking them. It is so hard to resist them. Well for me it is. They can be an accompaniment to a meal or served as an appetizer. I like them both ways but I love my hot sauce with them.
RECIPE
INGREDIENTS
2 Cups Water
1 Egg
3 To 3 1/2 Cups Flour
1 Teaspoon Baking Powder
2 Medium Sized Zucchini, Cut Into Finger Sized Wedges
5-6 Cups Oil, For Frying
Salt And Pepper To Taste
PREPARATION
Peel and cut the zucchini into finger length, size pieces.
Measure the water into a bowl and add 1 egg. Mix well.
Add approximately 3 – 3 1/2 cups of flour and 1 teaspoon baking powder. Mix well. Batter will be runny.
Dip each stick into the batter, lifting it out with a spoon. The batter will be dripping off the spoon. All you have to do is take a fork and from underneath the spoon bring the batter around and over the zucchini. Keep repeating this over and over until you reach the hot oil, then gently place it into the oil, (medium to medium high heat). This will give you more batter around the zucchini.
Or you can dip the zucchini into the batter lift it out with the fork quickly and gently place it into the hot oil. Sorry for the blurry picture but it was rather difficult to do all of this and take the picture at the same time.
Fry until golden.
Remove from oil and serve. I like to let the sticks sit a little while so they will soften up. You can keep them warm at a very low temperature in the oven.
