Yet Another Coleslaw Salad

 

IMG_6203Just when you think that there can’t be another recipe for coleslaw, there it is.  I love coleslaw and usually have a big bowl of it sitting in the fridge.  Most of the time it is very plain and simple but sometimes I jazz it up.  We now have it so readily available to eat because I have discovered the art of semi prepared food at the grocery store.  The cabbage comes pre-cut with the carrots and red cabbage in it.  Ssssoooo easy.  This way we have it more often and we eat more veggies. I don’t make it from scratch anymore.  To much to wash up.

IMG_6202Just dump the pre-cut cabbage into the bowl, add the cranberries, apples, mayo, apple cider,honey, salt and pepper. Give it a real good mix and your good to go.

IMG_6205Can be eaten right away but best in the fridge for a couple of hours.
IMG_6203This recipe is easy and delicious.  Give it a try.  I even eat it with eggs and hot sauce.  Or try adding cooked shrimp or lobster. I would love that.  MMMM!!!

RECIPE

INGREDIENTS

7-8 Cups Of Prepared Cabbage, (With Red Cabbage, Shredded Carrots, Thinly Sliced Celery (Opt.))

2 Cups Finely Chopped Apples

2 Cups Finely Chopped Pears (Opt.)

2 Cups Dried Cranberries

2 Cups Mayo, Or To Taste, OR 1/2 Cup Mayo, 1/2 Cup Greek Yogurt

1/4 Cup Apple Cider Vinegar, Or To Taste

1/4 Cup Honey, Or To Taste

Salt And Pepper To Taste

PREPARATION

Into a large bowl add all the ingredients, mix well and refrigerate for a couple of hours.  If there isn’t enough of something, just add more.  Or if there is too much of something, just don’t add as much.  If you want to add something else that you like, do it.  Don’t be afraid to put your own spin on it.

Serve along side with any meat or even just some crusty bread.
