Super Simple Anglefood Cake With A Jello Surprise

IMG_6134 (1)This cake is so simple that I can do it with my eyes shut.  Ok, that is a bit of an exaggeration but it is really simple.  I have made my share of cakes over the years.  A lot of fancy tortes but the one thing I don’t have the patience for is decorating.  My daughter in law is absolutely fantastic and whiz at decorating.  She is the feminine version of The Cake Boss, a.k.a. Buddy Valasco.  You name it she can make it.  My idea of icing a cake is whipping up some whip cream and nicely smoothing it on cake.

This cake I have been making for a while and I don’t remember where the recipe came from.  This time I even eliminated a step.  Instead of baking the cake, I purchased it at a bakery.  I mean really, an Angel Food Cake for a dollar!  You can’t make it at home for that price.  Want to impress someone, try this recipe.

First make two small boxes of Jello according to package directions.

IMG_6116 (1)Then whip up a small container of 35% whipping cream.

IMG_6117When soft peaks form add 1 cup of icing sugar and beat until nice and stiff.

IMG_6118 (1)Scoop out the middle of the cake and line the hole with a little whip cream.

IMG_6119Sorry for the blurry picture.  But I do not have another one.  Cut prepared jello into cubes and place some into the cake, top with whipped cream then repeat this step once more.

IMG_6122 (1)I made sure I ended up with the whip cream on top so it would hold as a glue for the bottom of the cake that I removed.  Then I covered it with a plate and inverted the cake .

IMG_6125 (1)Perfect!

IMG_6134I proceeded to finish icing the cake with the whip cream, sprinkling on some coloured sprinkles and surrounding it with the leftover Jello cubes.
