My husband the Mayor is almost always requesting Shepard’s Pie. So much so that it gets boring. This time I put a little twist on it. I didn’t think it was anything fancy but the gang sure liked it.It sure was easy to make and I made the meat filling the day before. So on the day, I all I had to do were my mashed potatoes. So easy.
Chop 1 carrot, 1 rib of celery, 1 onion. Sorry forgot to take pictures of the potatoes. Peel and cube about 10 potatoes. Cook until soft, drain and add 2 tablespoons of butter and 1/4 cup of milk, mash. Set aside.
Place veggies ad garlic into a pan with some olive oil and fry for about 5 minutes.
Next, add your ground beef and brown, breaking it up into little bits then adding 1 teaspoon cumin, 2 cloves grated garlic, 3 tablespoons Worcestershire sauce, salt and pepper.
When meat has browned add 2 cups of frozen peas and 2 cups of corn. Mix well.
Next add 1 box of beef stock about 3-4 cups and then add 1/2 – 3/4 cup flour. Mix well so there are no lumps.
Cook for about 5 minutes, stirring constantly until it slightly thickens.
Into a oven proof pan, first add some meat mixture then a layer of your favourite cheese. I used mozzarella.
Then a layer of mashed potatoes.
Followed by another layer of meat, cheese…
Potato and ending with a layer of cheese. Cover and bake at 325 degrees for approximately 2 hours. When it is piping hot through out, it is ready.
Serve with a crusty roll and a scrumptious salad.
RECIPE
INGREDIENTS
10 Potatoes, Peeled And Cubed
3-4 Lbs. Ground Beef
1 Teaspoon Cumin
1 Tablespoon Dried Parsley Or 1/4 Cup Fresh, Chopped
Salt And Pepper To Taste
3 Tablespoons Worcestershire Sauce
2 Cloves Grated Garlic
Grated Cheese, To Taste
1 Onion, Chopped
1 Carrot, Chopped
2 Cups Frozen Peas
2 Cups Frozen Carrots
1 Box Beef Broth
3/4 Cup Flour
PREPARATION
Peel and cube potatoes Cook until soft then drain and add butter and milk. Mash. Set aside.
Fry the onion, carrot, celery for a few minutes then add the ground beef, garlic, cumin, parsley and Worcestershire sauce. Add the flour next stirring to eliminate any lumps Next add the beef broth. Mix well.
Into a 9×13 inch pan first place some meat mixture, cheese and mashed potato. Repeat this process until all of the meat, potato and cheese are used up. Always end with the cheese on top.
Cover with foil and bake at 325 degrees for about 2 hours. When the casserole is hot through out then it is ready. I like to do a taste test from the middle of the pan.
Serve with a roll and a salad.
