Quick and easy. Who doesn’t like that? I love pasta, I love veggies. Throw in some protein and you have a tasty meal. In this recipe you can change any of the ingredients to some of your favorites. I use this recipe a lot. It is a great standby when you don’t know what to make. Being pasta it is so versatile. Everyone loves pasta, oh except the Mayor. Too bad, it’s what we are having for supper.
Chop 1 cup of broccoli, 1 carrot, 1 red pepper 1/2 cup asparagus and 1 onion if you like.
Cube 2 chicken thighs. A tip, freeze the chicken. When ready to use PARTIALLY defrost and cube while still frozen. Much easier to cut.
Heat a fry pan with some olive oil. When hot add chicken cubes along with some grated garlic. Stirring frequently.
Add 1/4 cup soy sauce, 4 tablespoons sushi sauce and mix.
Next add in veggies. Stirring often but at this point you can cover and let it steam – fry for a few minutes. Until your vegetables are to your liking.
In a stock pot, cook the Chinese noodles according to the package directions. These are the noodles I used.
While veggies are cooking, add 1/4 cup of flour to a jar and 1 cup of water. Mix until no more lumps. Set aside.
Add slurry to your pan when veggies are done and keep stirring until it starts to thicken. If you find it gets too thick then just add some water.
Serve on noodles. I hope you enjoy this as much as we do.

INGREDIENTS
2-3 Chicken Thighs
2 Garlic Cloves, Grated
1 Onion, Chopped
1 Carrot, Chopped
1 Red Pepper, Chopped
1/4 Cup Soy Sauce
3-4 Tablespoons Sushi Sauce
3 Tablespoons Ketchup (Opt.)
1/4 Cup Flour
1 Cup Water
1 Cup Pasta Water
A Couple Gulgs Of Olive Oil
Salt and Pepper To Taste
PREPARATION
Chop veggies and chicken. Set aside. Into a container add the flour and water. Mix until well blended and no more lumps. Set aside. In a fry pan add olive oil, heat add meat. Brown meat with garlic then add veggies. Next add soya sauce, sushi sauce and ketchup along with a bit of the water. Slightly cover and let cook until veggies are al dente, or to your liking. During this cooking time boil a very large pot of water and add the Chinese noodles and prepare according to package directions.
When both are ready serve the chicken and veggies over the noodles and serve immediately.
