Shepard’s Pie, My Way

This is a request made by the Mayor.  He doesn’t very often ask for anything in particular so when he does, I try to make it.  This dish is a favourite in our home.

I like to make  it a bit differently.  Put my own spin on it so to speak.  I love to tweak recipes but I must remember to write these changes down.  A lot of times I put different ingredients into a recipe thinking, that I will remember and I don’t. Thank goodness for this blog.  I keep track of things here, which is a good thing.

I started making this dish and instantly changed the meat.  Then when I went to add some other ingredients and I didn’t have them.  So out of necessity I used what I had.  This time the tweaking was out of necessity. I turned out great and the Mayor loved it.  In the end that’s all that matters.

kijiji typewriter, kids dvd and cd 004Start by adding 1 chopped onion to some hot oil in a pan and cook until it starts to look translucent.  Add the rest of the veggies and cook for a couple of minutes.

kijiji typewriter, kids dvd and cd 003This is my favourite bacon to use for cooking.  It comes smoked and whole.  I buy it from a local butcher.  The shop is called Super Sausage.  Only being open Thursdays to Sundays I find at times I have to stock up.  Great to freeze.

kijiji typewriter, kids dvd and cd 008Add  1 cup of chopped bacon and 1/4 chopped parsley into the pan with the veggies and fry for a couple of minutes, until you see the bacon is cooking.  Next add 2-3 pounds of ground pork and fry until meat is no longer pink and has completely cooked.  Totally by choice, you can add 1 cup of peas and/or corn.

kijiji typewriter, kids dvd and cd 009Mix 1/4 cup of flour with 1 cup of chicken broth until it is well combined (slurry).

kijiji typewriter, kids dvd and cd 013This step you can do at any time.  Even the day before.  Just remember to bring to room temperature or even heat a little so when you place the potatoes onto the meat mixture they will spread a little easier.

Peel and cube 10-12 potatoes and boil until fork tender.  Mash until there are no lumps.  Next add 1/4-1/2 cup of sour cream, a couple of tablespoons of butter, 1 tablespoon paprika, 1 teaspoon crushed garlic (opt.)  Or to get really fancy add 4 oz. of cream cheese at room temperature..   If you find it is too dry add a little milk.

Place the mashed potatoes on top of the meat mixture, cover with foil, (at this point you can make this whole dish 2-3 days before you need it, cover and refrigerate) then bake at 350 degrees until all is nice an piping hot. I usually just take a spoon into the middle of the shepherds pie after about an hour and just taste it.  From there I gauge if it needs to stay in longer.

As I hate to admit, I forgot to take two pictures.  The finished mashed potatoes and the mashed potatoes on top of the meat.  Sorry everyone.  I’m usually in a hurry that occasionally I forget.  I’ll try to do better.

Serve with your favourite gravy, salad and even some crusty bread.

RECIPE

INGREDIENTS

MEAT MIXTURE

2-3 Lbs. Of Ground Pork

1 Cup Of Chopped Bacon

1 Cup Chopped Onion

1 Chopped Carrot

2 Ribs Of Celery

1/4 Cup Chopped Parsley

1 Cup Peas And/Or Corn (Opt.)

Couple Glugs Olive Oil

1/4 Cup Flour

1 Cup Chicken Broth (Can Use Water Instead)

Salt And Pepper To Taste

INSTRUCTIONS FOR THE MEAT MIXTURE

Add olive oil into a fry pan and heat.  When oil is hot add onion and fry until translucent, adding rest of the veggies next.  Fry until they become al dente.  Next add the ground pork and cook until it is no longer pink but always stirring and breaking the meat apart into pea size pieces.  When done, remove from heat and add your peas and/or corn.  Mix well.  Place into a large baking pan.

Into a Jar add flour and chicken stock.  Mix until there are no more lumps then add to the meat mixture and combine well.

Place all into a large baking pan.

INGREDIENTS

MASHED POTATOES

10-12 Medium Potatoes, Peeled And Cubed

2 Tablespoons Butter

1/4 Cup Sour Cream

4 Oz Cream Cheese

2 Tablespoons Paprika

1 Clove Garlic, Crushed

Salt And Pepper To Taste

Milk To Taste

INSTRUCTIONS FOR THE MASHED POTATOES

Peel and cube potatoes.  Place into a large pot and boil until fork tender.  Remove from heat and discard water.  Mash the potatoes until there are no lumps, then add sour cream, butter, cream cheese, paprika, and milk if necessary.  Salt and pepper to taste.  Mix well.   Place potatoes on top of the meat mixture and spread the potatoes out to cover the meat mixture.

Cover with foil and bake at 350 degrees for approximately 1 hour or until piping hot throughout.

Serve with your favourite gravy, salad and crusty bread.
