Listen up everyone. It doesn’t get easier then this. This is such a simple recipe that I could let my grandchildren put it together, by themselves.Just recently I had some leftovers starting to pile up and of course I did not feel like cooking. I tried to come up with a recipe that didn’t involve too much effort and if I could make extra that would be a bonus. Being I didn’t have to cook for a few days.
I made this recipe with leftover pasta, but you can use anything you like. Cooked chicken and veggies would be good, leftover stew, all be it thicker then usual would be good, a leftover stir fry would be excellent. The Mayor ( my husband) would love leftover turkey, cheese and cranberries. Let your imagination run wild.
It can be used as an appetizer or the main meal, served with a salad and even a vegetable of some sort. Just don’t be afraid to try it.
These are the egg roll wrappers I use.
Place egg roll wrappers onto a flat working surface and top the wrapper with some cheese.
Next place 1-2 tablespoons of pasta onto the wrapper.
Fold over and press the edges with a fork.
Place onto a parchment lined pan, sprinkle with a little flour.
Fry in heated oil on one side…
Then on the other, until they are golden in colour. Keep warm in the oven until all are fried.
Serve with extra cheese and some of your favorite pasta sauce, heated to your liking.
These are really good. Just fill them with your favourite leftovers. Next time I make my homemade lasagna (recipe in this blog), I will try this the next day with the leftovers. Oh gosh, I can taste it now.

INGREDIENTS
Leftover pasta
1 Package Egg Roll Wrappers
Oil For Frying, Depending On Size Of Your Pot, Enough Oil So Wrappers Are Sitting Comfortably In The Oil, Like Frying French Fries
Mozzarella Cheese, To Taste
Grated Parmesan Cheese, To Taste
Pasta Sauce, To Taste,
Crushed Chilies, To Taste, (Opt.)
Salt And Pepper To Taste
PREPARATION
Lay your wrappers onto a flat working surface. Top with extra cheese and place leftover pasta on top of cheese. With your finger tip that has been dipped into a little water, moisten 3 edges of the wrapper. Fold over the wrapper and seal edges with a fork.
Place the wrappers into a pan lined with parachment paper sprinkled with a little flour. If you have enough for another layer of stuffed wrappers then just repeat this process. When you have completed stuffing the wrappers you can cover with foil and place into the fridge. They will keep this way for approximately 3 days.
Fry 3-4 egg rolls at a time, until they are golden in colour. remove and place into a dish. You can also loosely cover and place into a very low degree oven,175 degrees.
When all of your wrappers have been fried, sprinkle with Parmesan cheese and serve immediately.
