I made these at the spur of the moment one day. I normally keep some cooked chicken in the freezer. Sometimes I cook it myself and other times I buy it already cooked, frozen and cut up. So easy to do when it comes already prepared so your dish is ready in minutes. I say take advantage of the fact there is help out there when you need it. This recipe makes lots. I like to do it that way, so I have no need to cook for a couple of days.
Into a large bowl add 3-4 cups of chopped cooked chicken, 2 cups of red seedless grapes, 2 cups of green seedless grapes, 1 chopped apple, 1 cup of chopped pickles, 1 cup of sour cream, 1/4 cup ranch dressing, 1/2 cup mayo, 1- 8 oz. package of cream cheese ( I have made this salad and not put the cream cheese in So it is optional), 2 teaspoons vanilla and 3-4 chopped ribs of celery.
Mix well.
If you decide not to put cream cheese into the bowl you can spread it on your soft tortilla shells.
Place some lettuce on the cheese, then the amount of filling you want. I used 2 large tablespoons. Gently start to roll the tortilla…
Remembering to tuck in the ends.
Cut and serve.
RECIPE
3-4 Cups Chicken, Chopped
2 Cup, Red Grapes, Sliced In Half
2 Cups, Green Grapes, Sliced In Half
3-4 Chopped Celery Sticks
1 Apple, Chopped
1 Cup Chopped Pickles
2 teaspoons vanilla
1 Cup Sour Cream
1/4 Cup Ranch Dressing
1/2 Cup Mayo
1Package Cream Cheese (8 Oz.)(Opt.)
Lettuce
Tortillas
PREPARATION
Mix all the chopped ingredients together. Place onto a soft tortillas some cream cheese, topping that with lettuce and then chicken salad. Roll the tortilla and tuck in the edges.
The best part, sit down and eat it.
This is really a good recipe, easy to make and so tasty too.
