This is another dish that I grew up with. My mother usually made these on all special occasions. We knew them as meat sticks. Many years later hearing people speak about another dish called city chicken, I always thought it sounded like my mothers meat stick recipe. Only to discover that it was the same. Not knowing why someone would name this city chicken, because there was no chicken in the recipe. Strange.Anyway, everyone loves these. They are as some say, “Finger licking good!”
Cube 2-4 Lbs. pork. I use a large package from Costco which has a mixture of boneless pork. It is very thick so I just cut it into pieces that I need. Place into a large bowl and add 1-2 tablespoons of granulated garlic, 1 tablespoon paprika and 1 large chopped onion. Mix well and cover. Place into the fridge and let marinade for a few hours. I like to let it marinade for 6-8 hours.
Now the measurements here are difficult for me to give. I eyeball ingredients when I cook. I will give you some approximate measurements and you can add more or less. Into 3 different bowls- add into one, 4 cups of breadcrumbs seasoned with 1-2 teaspoons granulated garlic, 1 teaspoon paprika, 1 teaspoon chopped parsley. Into bowl 2, add 5-6 eggs and beat. Into bowl 3, add 5 cups of flour.
With each individual meat stick, place first into the flour and cover the cubes of meat entirely with the flour. Next place the meat stick into the beaten eggs and coat entirely with the egg. Next place the meat stick into the seasoned breadcrumbs and coat the entire meat stick. While doing this last step, press the breadcrumbs firmly onto the meat.
Place the breaded meat stick into another bowl and repeat with remaining sticks.
Heat at a medium heat, 2-3 cups of oil into a fry pan and when it is hot place a few meat sticks into the pan and fry until golden all over.
Place the meat sticks into a large foil lined baking sheet. At this point you can do one of two things. Place them into the freezer. When frozen place them into a zip lock freezer bag. This method gives you the advantage of making how many you would exactly like. Or you can cover them with foil and bake at 350 degrees for approximately 1 – 1 1/2 hours. Or until the pork is not pink inside.
INGREDIENTS
2-4 Lbs. Pork Loin Or Pork Butt
1 Onion Chopped
4 Cups Breadcrumbs
1-2 Teaspoons Granulated Garlic, X2(One For Meat, 2nd For Breadcrumbs)
1 Tablespoon Paprika, X2
1 Tablespoon Chopped Parsley, X2
3-5 Cups Flour
5-6 Beaten Eggs
PREPARATION
