Blueberry Scones

Blueberry scones are delicious.  Well any scone is delicious especially with a nice cup of your favourite tea. It’s not too often that I will purchase a scone when we go into a coffee shop.  I am just amazed at the prices they charge.  Always thinking that I can make them for a lot less and I do.  Being so simple to make and only taking a few minutes to mix together, why pay the extra when you can make them a whole lot better, for less and get so many more.

Blueberry Muffins and Purse 002Into a processor bowl add 4 cups of flour, 1/2 teaspoon baking soda, 2 teaspoons baking powder, 1 teaspoon salt and pulse to mix together.  Next add 1 cup of partially frozen butter, cut into cubes…

And pulse until this forms little tiny balls that look like peas.

Blueberry Muffins and Purse 003Into a bowl add 1 beaten egg and 1 cup of sour cream and mix well.

Then add into the flour and mix together.  Sorry about this next step.  I forgot to take pictures. You next put the mixed batter into a bowl and add 1 cup of frozen blueberries.  Gently mix till all is combined then with an ice cream scoop place onto a parchment lined pan.

Blueberry Muffins and Purse 007Bake in a preheated 350 degree oven for 15-20 minutes or until the scones are browned.

RECIPE

INGREDIENTS

4 Cups Of Flour

1 Cup Sugar

1/2 Teaspoon Baking Soda

2 Teaspoons Baking Powder

1 Teaspoon Salt

1 Egg, Beaten

1 Cup Of Sour Cream

1 Cup Of Blueberries

PREPARATION

Into a processor bowl add flour, baking powder, baking soda and salt.  Mix together.  Next add the beaten egg mixed into the sour cream.  Add to the flour mixture and mix until it starts to combine but making sure not to over work the batter.  I then place this into a large bowl and add my frozen blueberries.  Sometimes I use my hands to combine.  I find this easier for mixing in the blueberries.

Next onto a parchment lined pan I drop the dough from an ice cream scoop and place into a 350 degree, preheated oven for 15-20 minutes and golden.

Blueberry Muffins Part 2 004Delicious alone, with clotted cream or whipped heavy cream.  Here’s a little secret I use.  When I don’t have either in the house, I use the thickest sour cream I can get.  Guess what?  No one knows the difference.  Top with jam and you are good to go.  SSSOOO good!
