On one of our outings for breakfast, the mayor had this dish that he loved but which he could not finish. The next visit to this restaurant he had it for lunch, always raving about it while he was eating it. So I decided to make it one day for supper. Hence, the Anytime Skillet.
It is very easy to make and takes very little time. The potatoes are the very thing that take the longest to do, but once peeled and baking you just have to wait. I love making this because there’s nothing to it. You probably could make it all in one pot, which one day I will try. That method would make it even easier but for now I will share with you how I do it.
Cube 1 onion and l piece of kielbasa, approximately 1to 1-1/2 cups .
Into a foil lined pan, place the potatoes along with a handful of chopped parsley, 1 tablespoon of Hungarian paprika and as much olive oil and salt as suits you. Place into the oven to bake at 400 degrees, until the potatoes are nicely crisped and soft on the inside. This took about 35 minutes in my oven.
Meanwhile slice about 2 cups of mushrooms and add to a fry pan which has already a few glugs of heated olive oil and the chopped onions frying. Also add the cubed kielbasa and salt and pepper to taste and stir. Cook until the mushrooms have reduced and the kielbasa is heated throughout. You can cover and cook at a lower heat. Keep warm until the potatoes are done.
When the potatoes are done add the kielbasa and mushroom mixture and mix together. Keep warm and fry two eggs per person.
I like to add a little cheddar or mozzarella cheese before I place the eggs on the potatoes. Also great with hot sauce.
RECIPE
INGREDIENTS
5-6 Peeled And Cubed Potatoes
1 To 1-1/2 Cups Kielbasa, Cubed
2 Cups Sliced Mushrooms
1 Onion, Chopped
Handful Of Chopped Parsley
Salt And Pepper, To Taste
Olive Oil
Grated Cheddar Cheese, To Taste
Hot Sauce, (Opt.)
PREPARATION
Peel and cube potatoes. Place them onto a foil lined pan and add olive oil, chopped parsley and Hungarian paprika.
Chop onion and slice the mushrooms. Add few glugs of olive oil to a heated pan and add the onions. Next add the mushrooms, and kielbasa. Fry until all is heated throughout and the mushrooms have reduced, covered and at a lower heat. Occasionally stirring. Keep warm if this is cooked before the potatoes are cooked.
When potatoes are done, mix them with the mushroom and kielbasa mixture and keep warm.
Fry two eggs per person.
Place the potato mixture on a plate for each person and top with cheese and eggs.
