Shrimp And Lobster Dip

This is such a yummy dish.  Served usually as an appetizer but equally as good as the main part of a meal, with a salad, crusty bread and a glass of wine.You can use this recipe or change it up to suit your taste pallet.  Use any seafood you like, add sour cream or even a bit of cream.  Use any good melting cheese that you like.   I love this dish because of the lobster , but add tuna, shrimp, crab or whatever floats your boat.

It is gooey, but that’s why it is so good.  Served with a nice crusty roll or baguette, you’ll think that your in heaven when you bite into it.  Once you’ve tried it, you’ll make it again and for no special reason.

Peel and devein 2 cups of shrimp then chop the shrimp into bite size pieces.  Shred 2 cups of lobster.  Set aside.

Shrimp Ana 002Finely chop 1 onion, 1 jalapeno  pepper, 1/2  green pepper…

Shrimp Ana 0034 cups of spinach and at the last minute I decided to chop 3 ribs of celery because I had it.

Shrimp Ana 007Now into a fry pan add 2 tablespoons of butter, melt then add 1 finely diced onion, 1/2 finely diced green pepper, 1 jalapeno pepper, chopped, 4 cups chopped spinach and fry for a few minutes.

Shrimp Ana 010Next add the chopped shrimp and lobster.

Shrimp Ana 011Cooking until the shrimp just starts to turn colour and the lobster,  just enough to slightly heat.  Remove from heat.

Shrimp Ana 001Shred all of the cheeses.   Stir in 1/2 cup cream cheese,  2 cups shredded Gruyere cheese, 1 cup shredded Cheddar cheese and 1 cup shredded Mozzarella cheese, add this to the shrimp and lobster,mix well.

Shrimp Ana 012Leave in the fry pan, if it is oven proof or place into a oven proof dish.  Bake in oven for 20 minutes or until golden and bubbling.

Shrimp Ana 017Cool off for about 5 minutes.  It will seem runny or a bit watery but it will thicken up as it cools.  Serve with crusty bread and of course, a glass of your favorite wine.  It also just occurred to me that you could serve this as a pasta sauce.  If it would be too thick then just add some pasta water to thin it out! MMMMM!

As we were eating this for our lunch, my husband the mayor had suggested that you could put this into a bread bowl to serve.  Either individually or a large one to serve a lot of people.  I thought this was a fantastic idea.  Good job, Mr. Mayor!

RECIPE

INGREDIENTS

2 Cups Raw Shrimp, De veined, Chopped Into Bite Size Pieces

2 Cups Raw Lobster, Shredded

1 Onion, Finely Chopped

1 Green Pepper, Finely Chopped

1 Jalapeno Pepper, Finely Chopped

4 Cups Spinach, Finely Chopped

2 Cups Gruyere Cheese, Shredded

2 Cups Cheddar Cheese, Shredded

1 Cup Mozzarella Cheese, Shredded

8 Oz. Cream Cheese

PREPARATION

Into a fry pan melt butter then add onions and fry for a few minutes.  Next add green pepper and spinach, frying for another few minutes.

Add shrimp and lobster and cook just until shrimp starts to turn pink.  Remove from heat and add all of the cheeses, mixing well. Transfer to an oven proof pan.  Place into a preheated 350 degree oven and bake approximately 20 minutes or until golden and nice a bubbly.
