We love this salad. So easy to make. My mother use to make it, so it’s been around for many years.Whenever stuck for a salad this one is great to make. All those beans, think of all the protein. I could eat this alone as a meal. It’s great for a buffet table or to take to a BBQ. I know there are people out there that don’t like beans and that’s a real shame. They are so tasty if made the right way.
Give this recipe a try. It is good.
Open 4 cans of beans and put them into a large bowl. Chop 1 onion and 1 red pepper, along with some parsley.
Add the 1 red pepper, 1 onion, bunch of parsley, salt, pepper, 1/2 cup olive oil, 1/4 cup sugar, salt and pepper and vinegar to taste, to the beans. Give it a good mix and refrigerate for a couple of hours.

INGREDIENTS
1 Can Red Kidney Beans
1 Can White Kidney Beans
1 Can Navy Beans
1 Can Romano Beans
1 Red Pepper, Finely Chopped
1 Onion, Finely Chopped
1 Bunch Parsley, Finely Chopped
1/2 Cup White Vinegar, Or To Taste
1/2 Cup Olive Oil, Or To Taste
1/4 Cup Sugar, Or To Taste
Salt And Pepper To Taste
PREPARATION
Open the cans of beans, drain and rinse well. Place into a bowl adding the onion, red pepper, parsley, olive oil, sugar, salt and pepper. Mix well, cover and refrigerate for a couple of hours. Then your good to go.
