Going to out of the way places for breakfast is a real treat for us. Love the little Mom and Pop restaurants. Food is generally good, fantastic service and at all at a reasonable price. When we go somewhere different we get to try different items which is great. I usually get some ideas for my blog this way. I love to try and recreate my version of what I have had. The last place we went to I had a French Toast Sandwich on the menu. It was delicious and instead of the fries, I switched it up for a salad.
So guess what I’m going to blog about today? You got it, my version of that sandwich.
Take 10 pieces of bread and spread them with mayo and mustard on both sides.
Followed by placing a slice of cheese, your choice, on each piece of bread and…
Sliced black forest ham on top of the cheese. I also like to add some hot sauce here.
Place top and bottom pieces together.
Wrap in saran wrap very tight.
Place in a pan with another pan on top and with weights on top of the second pan. A cast iron skillet would be ideal, and place for 2- 6 hours in the refrigerator.
Heat a fry pan with a few glugs of olive oil.
Remove from the saran wrap and dip the sandwiches one at a time into a batter of 4 eggs, a pinch of salt, , a half of tablespoon of vanilla and 4 tablespoons of milk. Sometimes I also add a sprinkling of cinnamon into the batter. Mix well. Dip the sandwiches for a couple minutes on each side.
Next place them into the fry pan. I like to use a non stick one. Making sure to cook the sandwiches at a lower heat so they don’t burn while the cheese is melting. It is also a good idea to cover the sandwiches while cooking. This helps the cheese melt faster.
When one side is nicely golden brown, flip it over and brown the other side.
Remove from pan and cut. My preference is in two, sprinkle with icing sugar and serve.
