Potato Dumplings (Halusky)

 

Halusky, Potato And Egg Skillet 020This is a dish I have been eating since I was a little child.  My Grandmothers made it, my Mother made it.  I made it for my children and now I make it for my grandchildren,  Everyone loves it.  Such a simple dish to make and with such basic ingredients.

When we have this dish, we don’t eat anything else with it but it can be a side dish.  It is totally up to you.  I do encourage you to try it.  It is ssssooo good.

Boil a large pot of water on the stove.

Halusky, Potato And Egg Skillet 003Brown about 1/2 cup of butter.  Set aside.

Halusky, Potato And Egg Skillet 002Peel 5-6 medium sized potatoes.

Halusky, Potato And Egg Skillet 005Cut into cubes and place into a blender.  I use a Vita Mix but any blender would do if it liquifies the potatoes.  Liquify then add 1 tsp salt and 2 eggs.  Blend well with potatoes.

Halusky, Potato And Egg Skillet 006Pour into a large bowl and add  approximately 3 cups flour.

Halusky, Potato And Egg Skillet 008Take a tablespoon and dip it into the boiling water then into the batter, which you hold in your other hand as you take, tear and drop about 1/2 tablespoon at a time of the batter and drop it   into the boiling water.  You may have to dip your spoon each time you do this.  I find I do it after several times.

Halusky, Potato And Egg Skillet 007Place the batter  in it and take a spoon and press the batter down and scrape the bottom.  The little dumplings will fall out of the bottom.  You could also use a spazale maker.  Repeat until all the batter is used up.  If you have made more batter then you may have to repeat t his step.  If there is a lot of batter and not a big enough pot then your haluski will stick together in one clump.

Halusky, Potato And Egg Skillet 009Bring to a boil, then reduce heat, so everything doesn’t boil over.  Stir a bit during this process.  After haluski have boiled for about 5-6 minutes, drain.

Halusky, Potato And Egg Skillet 010Place into a big bowl and add browned butter and feta cheese ( 1 cup) to taste.  Mix well.  Serve.  Traditionally, fried bacon is cut into cubes, fried and served on top.  I usually omit that step.

RECIPE

INGREDIENTS

6 Medium Potatoes, Grated Into A Liquid

2 Eggs

3 Cups Flour

1-1/2 – 2 Cups Crumbled Feta Cheese

1/2 – 1 Cup Cubed And Fried Bacon (Opt.)
