Ice Cream Cake

This cake is just too simple.  It requires no baking, just some assembly.  So who wouldn’t like to make it? Especially now when it is so hot outside.  I first tasted this cake at a meeting I went to.  All the ladies were making such a big deal about some cake someone brought in.  Well I had to check it out.  I found out it had ice cream in it, I knew that I would like it.  Of course when eating it, I was trying to dissect it, as I always do.  Much to my surprise I discovered that the cake was ice cream bars all fancied up.  Well, talk about surprised!  It is a cinch to make.

This is a cake for when you don’t feel like baking or when it is warm outside and you don’t want to heat the house with your oven but you need a cake.  It always gets aaahhhsss, and oooohhhhsss, everyone loves it.

I have like always put my own spin on it.  If you like ice cream, you’ll love this.

Ice Cream Cake 001Whip 1/2 a large container of 35 % whipping cream.  Add 1/2 cup of icing sugar and whip together.  Set aside in the fridge.

Ice Cream Cake 002Take  a 9×13 pan, (mine was a bit bigger) and place one layer of ice cream bars on the bottom.  Top that layer with some of your favorite jam, even a sprinkling of Amaretto.

Ice Cream Cake 003Next place a layer of whipped cream on top.

Ice Cream Cake 004Then sprinkle a couple of handfuls of crushed amaretti cookies on top of the whipped cream.

Ice Cream Cake 007Followed by another layer of ice cream bars, jam, whip cream.

Ice Cream Cake 008Top the last layer with crushed graham crumbs, or crushed cookies, shaved chocolate, or even sprinkles.  Whatever you like.  Place in the freezer and about 1 – 1/2 hours before serving, if your cake is large like mine was, bring to room temperature.

That’s it!  The hardest part is whipping the cream.

RECIPE

INGREDIENTS

19 Ice Cream Sandwiches ( I had a larger pan)

2 Cups Of Whipped Cream

1/2 Cup Icing Sugar

Jam Of Choice

Amaretti Cookies

Amaretto (Opt.)

PREPARATION

Whip the whipping cream until it starts to thicken and add icing sugar.  Whip until everything is combined and has thickened a bit more.

Into a pan of choice, place a layer of ice cream sandwiches.  Spread a thin layer of jam on the sandwiches, topped by a layer of the whipped cream.  Followed by the crushed amaretti cookies .

Next layer, place the ice cream sandwiches on top of the cookies followed by jam, whipped cream, and finishing with the amaretti cookies.

If you make this larger recipe, then remove from the freezer 1-1/2 hours before serving.  A smaller recipe would require less time out of the freezer.
