Fast And Easy Yarrow Soup, Salami Roll Up, Gnocchi 036This is such a super simple dish to make.  You can make it plain or jazz it up a bit.But no matter how you do it, it is really good.  I never use to make this very often but after having it at a party I thought, why not?  My daughter-in-laws sister made them and they were delicious.  She put little bits of cooked bacon into them and yum.  I mean really, what doesn’t taste good with bacon?  Thanks Aunty for reminding me how good these are.

Fast And Easy Yarrow Soup, Salami Roll Up, Gnocchi 022Place 5-6 XL eggs into a pot and add enough water to cover the eggs.  Bring to a boil then turn down to simmer for 12-15 minutes, partially covered.  When done, immerse in cold water and start to peel immediately.  Cut in half…

RECIPE

INGREDIENTS

5-6 Hard Boiled Eggs

1-2 Tablespoons Mayo

Salt And Pepper To Taste

1-2 Stripes Cooked Bacon, Finely Chopped

1 Tablespoon Diced Onion

Paprika

Chopped Chives

PREPARATION

Place eggs into a pot covered with water.  Bring to a boil and cook for 10-15 minutes.  Pour water out and immediately cover with cold water.  Peel each egg, cut in half and remove the yolk into a bowl and mash.  Next add the rest of the ingredients.  Mayo, bacon, onion.  Mix well.  Place this mixture into the whites of the eggs.  Sprinkle with paprika and chopped chives.
