This is really a nice salad. It is tasty, sweet and has a bit of a tang. My son loves it and my daughter-in-law does too. We had it for supper last night when they were over. Easy to make with just a few ingredients. I have been making it for years and no one ever gets tired of it. I think it’s a great way to get veggies in by disguising them a bit. You can mix this up with broccoli and grated carrots together with the cauliflower or even add dried cranberries or apricots. It is a fantastic salad for a BBQ alongside any meat. I know if you give it a try, you will like it.
Soak 2 cups of raisins in a bowl of water until they plump up. At least 1 hour. Set aside.
Into a bowl place the cauliflower, drained raisins and about 3/4 cup of MIRACLE WHIP. Not mayo! You can add more if this is too dry for you. Or start with 1/2 cup and if it needs more according to your taste, add more. NEVER be afraid to change up a recipe. Next add 1 teaspoon salt and give all the ingredients a real good mix. You can also add a bit of sugar. Everything should be coated. Refrigerate and your done.

INGREDIENTS
1 Chopped Head Of Cauliflower
2 Cups Of Soaked Raisins
3/4 Cup Of MIRACLE WHIP
1 Teaspoon Salt
Sugar, (Opt.)
PREPARATION
Mix all the ingredients together, so everything is well coated. Refrigerate for at least 2 hours, covered. Serve and enjoy!
