A number of years ago I traveled to Slovakia and stayed with my uncle and his family. It had been something I had wanted to do for years and when the opportunity arose I jumped at the chance. Staying with family gave me the opportunity to experience their way of life. It was an experience which I am grateful for. I did the everyday ordinary things. Go shopping, helped around the house, visited family and I had the chance to watch how they cooked their meals. This is the best way to learn. To obtain recipes from the heart of the home is how we learn to cook like the locals, so to speak. It was fabulous. Not only did they share their recipes I was able to show them some of mine. My aunt and my uncle were both great cooks. This is a Slovak recipe that I would like to share with you. It is very simple and quick to make. It only has 4 ingredients. I have changed one thing in the recipe. I have made use of my Kitchen Aid mixer. Originally this recipe was placed into a large plastic container with a lid. Everything was dumped in and shaken for about 3 minutes, to thicken the whip cream. To make it easier and faster, I found it better to use the mixer. You can try making it the way you want. Just try it. Into a spring form pan. Mine is 9 1/2 inches round, place the little round vanilla wafers, the whole box, 312 g. but before putting them into the pan, you can do 1 of 3 things. Dip them VERY quickly into some fruit juice, coffee or my favorite, amaretto. Set aside.
Just keep placing them one on top of the other, until you have used the whole box.
Into a Kitchen Aid mixer, or mix master as we use to call them, pour in 2 1/2 cups of 35% whipping cream.
Add 2 packages of instant vanilla pudding 30 g each then whip until soft peaks form.
Add the 2 cans of mandarin oranges…
Mix and set aside.
Now I have told you before and I highly recommend it. After Easter when all the chocolate is reduced 50-75%, stock up, buy a whole bunch and freeze it. It is fantastic for baking and costs so little. So many things you can do with it.
Next place the whip cream mixture on top of the cookies…
Make sure it is evenly spread.
Grate 1/2 cup chocolate, less or more if you like, of your choice and sprinkle it on top of the cake. Making sure to cover the top. Place into the fridge for at least 3 hours. I like it in longer 6-8 hours.
Scrape the cake with a knife all around the edge to loosen it. Take the ring of the pan off and place on a serving platter.
Cut and serve. Oh Yum!!! RECIPE INGREDIENTS 1 Box Vanilla Cookies, 312 gr. 1 Cup Fruit Juice Or Coffee 2 Boxes Instant Vanilla Pudding, 30 gr. Each 2 Cans Mandarin Oranges, 284 Ml. Each, With Juice 1/2 Cup Grated Chocolate. PREPARATION Take the vanilla wafers, dip them into fruit juice and place into a spring form pan. Add instant pudding to the whip cream and beat into stiff peaks. Mix in mandarin oranges with juice. Place the whip cream mixture onto the wafers and smooth the top. Cover and refrigerate for at least 3 hours. Cut and serve. ENJOY!
