How can anyone not like salads? I have no idea. Being so versatile, you can add anything you want. Add a little dressing, add a lot of dressing. A lot of veggies, a few veggies. With a nice salad you don’t even need to add meat or carbs like bread, rice or potatoes. So healthy with all the veggies and so light after eating meat and potatoes all the time. Just combine your favorite things to eat with some lettuce and you have a meal without any fuss. Pre-cut your veggies, and cheese. Store them in a container in the fridge and you can at any time make a salad without having anything to do, other then throwing everything in a big bowl and mixing it all together.
So give this salad a try. It is fantastic for lunch or supper.
Into a large bowl add 2-3 romaine hearts that have been chopped. This makes a lot but I keep it in the fridge uncovered with the rest of the ingredients sitting on top. This way whenever I want a salad everything is ready to go. If you DO NOT mix all the veggies with the lettuce it lasts at least up to a week in the fridge, uncovered.
Next add 1-1 1/2 cups of chick peas, 1/2-1 chopped English cucumber, couple handfuls of olives, of your choice, 6-7 slices of Hungarian salami, chopped, 2-3 chopped green onions, 1-2 chopped tomatoes and even a chopped hard boiled egg. Leave all of this sitting on top of the lettuce and refrigerate.
Next in a jar add 1/4 cup of olive oil, 1/4 cup of red wine vinegar, salt and pepper to taste and 1 handful of Parmesan cheese.
Place lid on the jar and shake until everything is well combined.
Put salad onto individual plates and top with dressing and extra Parmesan cheese.

INGREDIENTS
2-3 Heads Of Chopped Romaine Lettuce
6-7 Slices Of Chopped Hungarian Salami
6-7 Balls Of Bocconcini Cheese
Handful Of Olives
1 Chopped Tomato
1 1-1/2 Cups Of Chickpeas
1-2 Hard Boiled Eggs, (Opt.)
2-3 Chopped Green Onions
Parmesan Cheese
1/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
Salt And Pepper To Taste
PREPARATION
Chop lettuce, tomato, green onions, olives, Hungarian salami, bocconcini, and whatever else you would like. Place all the chopped ingredients on top of the lettuce and refrigerate uncovered..
Mix vinegar, oil and cheese in a jar.
Serve on individual plates. Top with dressing and extra cheese.
