Another delicious salad. This recipe is always a hit whenever it is made. Few steps and if the prep work is done ahead of time, it takes no time to put together.The first time I made it I could not believe how tasty it was. You can be inventive with this salad and add all kind of ingredients. My friend V kept telling me about it and finally I decided to try it because I needed to make a salad for a party and I wanted to bring something different. Everyone raved about it.
So like they say, “Try it you’ll like it.”
When I made this it was for 24 people. So I will cut the recipe in half but you will see the ingredients for the larger recipe. You need 1 package 454g. of your favorite pasta, 1/2 head of chopped cauliflower, 1 bunch of chopped broccoli, 1 1/2 cups of sliced green beans, 1/2 cup of slice cherry tomatoes and 1 grated clove of garlic.
Put pasta into a pot of boiling salted water and cook according to package directions. This picture is in focus it’s just all the steam coming from the boiling water. Sorry.
When you have 6 minutes of cooking time left add the veggies.
When cooked, drain and rinse with cold water to stop the cooking process.
Place in a big bowl and add 1/4 cup olive oil, 1 handful of grated Parmesan cheese, 1 grated garlic clove, veggies and salt to taste. Cover and refrigerate overnight. Next day you may need to add more olive oil.
Place into a serving bowl and that’s it. Really.
RECIPE
INGREDIENTS
1 Package 454 Gr. Pasta, Your Choice
1 Head Of Broccoli
1/2 Head Cauliflower
1 1/2 Cups Of Green Beans, Sliced
1- 1 1/2 Cups Of Cherry Tomatoes, Cut In Half
1-2 Cloves Of Garlic, Grated
Olive Oil, To Taste
Red Wine Vinegar, To Taste
Salt And Pepper, To Taste
Couple Of Tablespoons Of Fresh Basil, Chopped (Opt.)
OR
Italian Salad Dressing, To Taste
PREPARATION
Bring a very large pot of salted water to a boil. Add pasta and cook according to directions. When you have 6 or 7 minutes left in your cooking time add all the vegetables. After the 6 minutes, drain the pasta and veggies and rinse with cold water. Making sure it is well drained.
Next add the oil, vinegar, salt, pepper and Parmesan cheese. Mix well. Cover and refrigerate for a couple of hours.
Serve with almost anything. Great if shrimp is added in the last 6 minutes of cooking time. One little tip. I like using Olive Garden salad dressing in this recipe but with added olive oil.
