Coleslaw With Dried Cranberries, Raisins And  Apricots 008I love my salads in the summer.  I dig out all my salad recipes that I have been making for years and get to work.  We have our favorites but they all seem to make the rounds and some of them get a makeover.  I add things, I take things away and sometimes I even just leave them the same.

A lot of my inspiration comes from just doing my shopping.  Not just at the supermarket but from the Farmer’s Market.  Going to an open air market early in the morning, before it gets scorching hot, the breeze gently blowing in your hair, seeing all the fresh produce makes me want to buy everything.  I get all kinds of ideas.  The problem now being, I forget by the time I get home.  So I have to have a better plan, like writing some of these ideas down.  I love the fact that you support your local farmers shopping this way. They work so hard, sometime without little reward.  It is not an easy life for them, seven days a week.  One word of caution.  Take a look in the back end of the vendors trucks and have a look at how the produce is packed. The local farmers have their bushels and baskets to pack and store their produce.  There are others there, that have the same boxes you see your local grocery store loading their shelves with.  You see, anyone can go to a wholesaler, purchase produce, rent a space and sell things you think your getting locally and your not.  The thing I love to do the most, is drive to the actual farm and wander around their produce tables, or even pick my own. This way you can source out your organically grown farmers for much less then in your grocery store also a lot fresher, and your food taste so much better.  Well worth the effort.

Here’s a variation on my coleslaw recipe.  This is so versatile. Goes with almost any kind of meal.  I made this today to go with my BBQ’d kielbasa on a bun with fried bacon and onions and my mustard and cheese sauce. MMMM!!!  I know you’ll love both of these recipes.

Coleslaw With Dried Cranberries, Raisins And  Apricots 006Place into a large bowl, along with 1 cup of dried cranberries, dried chopped apricots and raisins. Also add 3/4 cup of mayo, sour cream, 1/4 cup rice wine vinegar and 1 heaping tablespoon of raw honey, all premixed in a large container.  Combine well and refrigerate for at least 2 hours.

RECIPE

INGREDIENTS

1/2 Curly Cabbage, Finely Sliced

1/2 Red Cabbage, Finely Sliced

1 Carrot, Shredded

1 Cup Dried Cranberries

1 Cup Raisins

1 Cup Dried Apricots, Finely Chopped

3/4 Cup Mayo

3/4 Cup Sour Cream

1/4 Cup Rice Wine Vinegar

1 Heaping Tablespoon Raw Honey

Pinch Of Salt

PREPARATION

Finely slice all cabbage.  Finely shred the carrot.  Place into a large bowl adding premixed mayo, sour cream, rice wine vinegar and raw honey. Also adding dried cranberries, dried apricots, raisins and a pinch of salt.  Combine until everything is well coated and mixed to give you a taste of everything in one bite.  Refrigerate for at least 2 hours but longer is better.

Serve in a nice serving bowl family style.
