Shrimp Quesadillas

Shrimp Quesadillas - 2 009I purchased quite a lot of shrimp a while back and it’s a good thing I did.  Lately I have had such a craving for it.  Love cooking it and eating it but not so crazy about cleaning it.  Unfortunately this shrimp did not come cleaned.  That’s probably why it was on sale.

This being a quick and easy recipe I was quite anxious to try it.  Love those kind of recipes.  I love to cook but even I have times that I just don’t want to do it.  So when I can think of something quick to make, it makes my life a whole lot simpler.

There are very few ingredients in this recipe.  So if the prep work is done ahead of time and stored in the fridge, then it’s just a matter of minutes to the grand finale.

Shrimp Quesadillas - 2 001Into a bowl place 1 chopped avocado, 1 chopped tomato, the juice of one lime and it’s zest, 4-5 tablespoons of parsley, 1/2 red onion, salt and pepper to taste and a couple of glugs of olive oil.  That’s what I call my fancy avocado pico de gallo.

Shrimp Quesadillas - 2 002Line a baking pan with foil and onto it place all the cleaned shrimp.  Next sprinkle on 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon seasoned salt and a couple glugs of olive oil or olive oil with garlic.  Give it a good mix so all the shrimp is coated in this luxurious spicy mix.  Yum, yum and double yum.  Into a preheated oven (350 degrees), place the shrimp to bake for 12 minutes.

Shrimp Quesadillas - 2 004Next onto the tortillas place a layer of shredded cheese.  Now from this step forward the amounts you place on the tortillas is up to you.

Shrimp Quesadillas - 2 005Add a layer of cooked shrimp that has been cut in half and a layer of pico de gallo.  Place this into a preheated pan that has also been sprayed with oil.

Shrimp Quesadillas - 2 006You should see the cheese melting.  Now sprinkle another layer of cheese on top.  You can even sprinkle some of your favorite hot sauce on this.  On to this place another tortilla and press down firmly.  With a spatula flip the quesadilla to melt the top layer of cheese and slightly brown the quesadilla.

Shrimp Quesadillas - 2 008Cut into triangles and serve with salad.  Oh my GOSH, this was really good.  You’ll love it.

RECIPE

INGREDIENTS

AVOCADO PICO DE GALLO

1 Medium – Large Avocado, Finely Chopped

1 Large Tomato, Finely Chopped

Juice Of 1 Lime Plus The Zest

1/2 Red Onion, Finely Chopped

4-5 Tablespoons Parsley, Finely Chopped

Salt And Pepper To Taste

SHRIMP

1 Bag Of Cleaned Shrimp

1 Tablespoon Cumin

1 Tablespoon Garlic Powder

1 Tablespoon Seasoned Salt

1/4 Cup Olive Oil

1 Cup Shredded White Cheddar

Tortillas

PREPARATION

Chop the avocado, tomato, parsley and red onion.  Place into a bowl, add the lime juice, zest and salt and pepper to taste.  Set aside.

Clean the shrimp and place onto a foiled lined pan.  Sprinkle with cumin, garlic powder, seasoned salt and drizzle the olive oil over all of this and mix well.  Allow to sit for 1 hour.  Place into a preheated oven and bake for 12 minutes.  Remove shrimp and proceed to cut the shrimp in half.

Preheat a fry pan sprayed with oil.  Place a tortilla into the pan and sprinkle with the cheese.  When the cheese begins to melt, top it with the shrimp and the avocado pico de gallo.  Sprinkle some more cheese on the shrimp mixture, topping it with another tortilla making sure the bottom tortilla has browned.  Flip the tortilla and cook for another minute or until the tortilla has browned to your liking.  Remove from pan and serve immediately.  Or you can place it into the oven at a very low temperature to keep warm until you have finished cooking the others.
