I love making this salad because it is so quick. If you can chop a few veggies and open a can of chickpeas then you can have this salad in minutes. It is colorful, nutritious and so darn good.You can add what you like. Stick to the recipe or not. Chunks of meat or fish would be fantastic in here. Served with crusty rolls and soup you have such a fantastic meal. It does not require any cooking. If extra is made you have leftovers for a couple of days without any thought given to making anymore meals. It is a win win situation when making this salad. Give it a try.
Chop 1 cucumber, 1 green pepper, 1 orange pepper, 1 yellow pepper and 2 tomatoes.
Place the chopped veggies into a bowl along with 1 can of chickpeas, 1/4 cup of fresh chopped dill and 1 cup of crumbled feta cheese.
Next add salt and pepper to taste, 1/2 freshly squeezed lemon, the zest of the lemon and some Thai sauce. About 1 to 1-1/2 cups. Also add a few glugs of olive oil and give the salad a good toss.
There you have it. Fast and easy chickpea salad.

1 Chopped Green Pepper
1 Chopped Yellow Pepper
1 Chopped Orange Pepper
1 Chopped English Cucumber
2 Chopped Tomatoes
1 Can Of Chickpeas
1 Cup Feta Cheese
1/4 Cup Chopped Dill
Juice And Zest Of 1/2 Lemon
Salt And Pepper To Taste
A Few Glugs Of Olive Oil
A Few Glugs Of Thai Sweet Chili Sauce
PREPARATION
Add all the chopped veggies into a bowl along with the rinsed chickpeas, feta cheese, dill, salt and pepper, olive oil and Thai sweet chili sauce. Toss and enjoy! It’s that easy.
